		<description>Hi Sue - Yeah, my whole tomatoes float quite a bit too. They shrink a bit during the hot water bath, giving off some of their juice. I&#039;ve never worried about it - just makes them easier to get out of the jars.</description>

If I can&#039;t eat them or process them all before they start to turn, I just pop them in a ziplock bag in the freezer - they are perfect for cooking with.</description>
