I recently scored a huge bag of ripe plum tomatoes for $1 this past weekend. I’ve already frozen the majority of them in thinking I would try my hand at homemade tomato sauce, but this sounds delish! Although, I don’t eat fish I’m hoping tofu will make for an equally scrumptious meal. Thanks for the idea!
