So glad it worked out Kendra! Sounds like a most excellent cheese combination. If you're bringing food to new moms, don't forget this spinach lasagna, full of iron and calcium.

Molly, thank you for the clarification, this was totally delicious! I used romano, aged gouda, gouda, and a little Tillamook sharp cheddar. Rave reviews from my friend with a two-week old baby. Will be bringing it to another friend next week! Flavorings were perfect, just enough Dijon tang and cayenne spice.

I added a clarifying "more" to one of the listings Kendra! After you mix in the cheese you should taste the sauce and adjust the various seasonings to your taste (if you want).

I hope you like it as much as we all do!

Hey, I notice you have two places where you put in the spices. Which is better? (Sorry, editing habits die hard and I want to make this Friday!)

I think those proportions look just perfect, a bit spartan is good, I've never liked my pasta drowning in sauce.
Lovely post and a nice reminder of something I really like and haven't made for ages.

We had homemade Mac 'n' Cheese just a few nights ago. It's still a favorite with my little boy (16). It's a great way up all the bits of cheese left over from other recipes.

I forgot to explain the brown/red dot - that, according to Ernest, is the cheese. He couldn't find his orange marker and was in a hurry and tried to "make orange and have it not look like the noodles."
