My mom's zucchini bread is legendarily good. I ate so much of it growing up I'm pretty sure I'm at least 32% zucchini bread to this day. But my favorite use of Zucchini is Zucchini bread. I'll even freeze it. (you can even make muffins with the batter!) They're a classic in my family.
