Maris, I like firm silken tofu--it comes in a sealed box and is shelf-stable (you don't have to refrigerate it, like those boxes of milk in Europe). It's easy to cook with. Good luck!

My CSA box has been loaded with good things lately, but no butternut squash yet. I'll try that recipe you linked to in your post once I have the squash. It looks wonderful. For now, I'll go for your zucchini stir fry as I have plenty of that. Plus, I have the same rice issue in my pantry that you have, so I'll combine the zucchini recipe with a mix of rice package dregs. :-)
Thanks! Lovely blog, by the way.

I've been trying to eat less meat and want to start experimenting with tofu but I've never made it before. Is it difficult? I'm definitely going to flag this for when I do get around to buying tofu. I also get so confused by the different textures!
